All the flavours of Cabbage Rolls with so much less work. A few simple ingredients come together in 30 minutes in your Instant Pot to make this delicious Instant Pot Unstuffed Cabbage Roll soup with very little effort.

Ingredients
1large onionchopped
2clovesgarlicminced
1 1/2lbsground beefor beef/pork combo
1 1/2TbspThyme
2tspblack pepper
1tspsalt
4cupscabbagecoarsely chopped
5cupsbeef broth
1/4cupbrown sugar
28ozdiced tomatoeswith juice
8ozplain crushed tomatoes
1/2cuplong grain ricenot minute rice
Instructions
Set your Insant Pot to Saute on high heat, add olive oil and chopped onion and saute 1-2 minutes until translucent.
Add ground beef mixture and saute until light browned, about 3-4 minutes. It doesn't have to be fully cooked. Stir in Thyme, Salt and Pepper. Add chopped cabbage.
Next pour in the beef broth, diced tomatoes, crushed tomatoes, brown sugar, and the rice. Stir the top half gently avoiding getting all the way down to the cabbage as much as possible.
Turn the saute function off, set you Instant Pot to Highe Pressure for 12 minutes. Once done, use the quick release and stir everything together. Taste and add additional salt and pepper to taste.
Notes
If you're Instant Pot gives you the burn warning, turn off the pot, release the pressure, and with a wooden spoon see if the rice has sunk to the bottom and stuck there. If so, scrape it up, add a little more water and bring back to pressure. You can actually achieve a nicely cooked soup without letting it technically pressure cook, but just the time it takes to come to pressure twice will do the trick. Don't ask me how I know this.Also, this is a super thick soup, if you prefer it thinner, once it's cooked you can add additional water or broth to reach the desired consistency.
