Instant Pot Taco Soup
Taco Soup Made in the Instant pot, hearty enough for a meal. and so easy to make. Can also be made in the Slow Cooker or on the Stove top.

Instructions
DIRECTIONS:
FOR THE INSTANT POT:
Set the instant pot to “Saute” and add olive oil.
Once hot, add the ground beef, onions and bell pepper, cook until meat is browned.
Remove the insert (careful it's hot), and drain the beef. Return to insert.
Put the meat, onions and peppers into the instant pot.
Add corn, pinto beans, black beans, green chilies, taco seasoning, garlic powder, and cumin. Stir well.
Add beef broth, do not stir. Pour in diced tomatoes and then tomato sauce. Don't stir
Place lid on instant pot, set to HIGH and pressure cook for 12 minutes.
Do a quick release, remove lid and stir. If the soup is too thick, add a little water or broth.
For the Slow Cooker:
In a large skillet, over medium heat, add olive oil and onions. Saute 1 minute.
Add the ground beef, bell pepper, cook until meat is browned.
Drain browned ground beef, and transfer to a slow cooker.
Add all remaining ingredients and stir well.
Cook on low heat for 4 hours or high for 2 hours.
For the Stove Top:
In a large soup pot, over medium heat, add olive oil and onions. Saute 1 minute.
Add the ground beef, bell pepper, cook until meat is browned.
Drain browned ground beef, and return to the soup pot.
Add all remaining ingredients and stir well.
Simmer on low for at least an hour with the lid on, but slightly off center to allow some steam to escape. Add more broth or water as desired.
Notes
We like to serve our Taco Soup topped with cheese, diced red onions, sour cream and crumbled tortilla chips.
