Panko Asparagus with Chipotle Lime Aoli

Ingredients

  • 1 lb asparagus
  • ½ shredded Parmesan cheese
  • 1 egg
  • ½ cup panko crumbs or other bread crumbs

Chipotle Aioli

  • 2 tbsp chipotle sauce
  • ½ lime squeezed
  • 1 cup mayonnaise

Instructions

  • Wash and cut woody ends off asparagus.
  • Blend Parmesan cheese and Panko crumbs. Place on cookie sheet.
  • Dip asparagus into egg and then into crumb mixture.
  • Bake at 350° for 10-15 minutes or until asparagus are tender.
  • Combine mayonnaise, lime juice and Chipotle sauce together until well blended for dipping sauce
