Whisk well to combine and add some air to the mixture
Add chopped ham and shredded cheese, mix well to combine
Spray a 9"x13" sheet pan with cooking spray. Pour in egg mixture.
Bake in oven for 10-12 minutes until fluffy and fully cooked.
Remove from heat, let sit 4-5 minutes to cool before cutting into 12 squares

These Sheet pan Ham and Egg portions will keep stored in an airtight container in the fridge for up to 4 days. They can also be frozen in a freezer proof container, with freezer paper between each layer to keep them from sticking. If you want to go ALL in meal prep, assemble into breakfast sandwiches, wrap and freeze. I use parchment paper or freezer paper. Both of these papers can be used in the microwave. Only parchment can go into the oven. To Heat from frozen: To heat from frozen, I use my microwave. I like to heat them for 2 minutes, but I do one minute at a time, waiting about a minute in between. I'm not sure why but it's better this way. To Heat from fresh: Microwave for 15-20 seconds or until heated through. Let sit 30 seconds before eating. You don't want to over heat these or the bread will get super chewy. Trust me.
