Ingredients
1cancoconut milk
3tbsp.green curry pasteadjust to taste
1tbsp.soy sauce
1tbsp.fresh lime juice
3tbsp.brown sugar
1clovefresh garlicminced
2tspfish sauce
1/4cupfresh cilantrocoarsely chopped
Instructions
To Make the sauce
In a sauce pan over medium heat combine all ingredients, whisk well. Reduce heat and simmer over low for 15 minutes until slightly thickened.
To Make the meal
In a separate pan, cook meat of your choice until nicely browned. Add vegetables and cook until just beginning to soften. Add meat and vegetable mixture to the curry sauce and simmer until tender, 5-10 minutes depending on the vegetable combination you have chosen.
Notes
Green curry sauce will keep refrigerated for up to a week.
