Sweet oven roasted beets with toasted walnuts and goat cheese. An easy yet delicious side dish. Perfect to serve as a side with grilled chicken or meat.

Ingredients
3large beetsroasted, peeled and cubed
4ouncesblack pepper goat cheese crumbled
2Oz.toasted walnuts
1/4cupfresh squeezed lemon juice
1/4cupbalsamic vinegarwhite if you have it
1/4cupextra virgin olive oil
2teaspoonssugaroptional
1/2tspsalt
Chopped Chives for garnish
Instructions
Wash beets and wrap in Aluminum foil. Roast in a 375 degree oven for 45 minutes or until tender. Time will vary depending on the size of the beets. Candy Cane and Golden beets will cook slightly faster.
In a bowl combine lemon juice, olive oil, balsamic vinegar, sugar and salt, whisk to combine.
Remove beets from the oven. Peel off the outer skin (wear gloves or use a paper towel to avoid super red hands). Cut into bite sized pieces.
Pour vinaigrette over the diced beets. Toss well. Crumble black pepper goat cheese into bowl
Mix well and chill 30 minutes.
Top with Toasted walnuts and garnish with chopped chives for a pretty presentation.
Notes
To make crumbling the goat cheese easier, and keep it from "melting" into the vinagrette, place it in the freezer for 30 minutes. Remove from the freezer, slice and then crumble using your fingers into small crumbles.I like to use a combination of Golden, Candy Cane and Red beets. Each has a slightly different flavour and the colours are stunning.
