I love making salads. Like really good, full of flavour, restaurant style salad with all the goodies in them. Fresh, flexible, easy enough to throw together and complex enough to be a full meal. Salad Greens options:
- chopped iceberg salad from a bag works great
- chopped romaine lettuce
- Spring Mix
- Arugula
- Baby Spinach
- chopped Kale
Use an one, or a combination of two or three of these greens to get good variety and better nutrients. The darker the green, the better it is for you.
TIP: If you want to make dinner time a breeze, prepare all your Supper time salad ingredients ahead of time on Prep Day, store in a nice divided container in the fridge and let everyone “Build their Own”

Cobb Salad with a Tex Mex Twist! There are so many goodies in this salad you don't need anything else for dinner. Grilled seasoned chicken, beans, quick pickles onions, corn, cheese, oh yes, you NEED to try this one!
This Grilled Chicken Caprese Salad honestly takes just a few minutes to assemble, and it's so good it will be devoured even faster! Greens, baby boconcinni, tomatoes, and an amazingly easy dressing. Serve it up with some warm french bread and dinner is done. Salads for Supper at it's finest
This all in one Chopped Italian Salad has green, legumes, and pasta built into one dish. I like to serve with with a good Focaccia bread warmed and drizzled with garlic or herb flavoured oil. It's also great with Ciabata Cheese Bread.
Club Salad Sandwich comes from my good friend Laura over on the Blog Little House Big Alaska. It's Phenomenal! Make it once and you'll be hooked. This is one of the BEST Main Dish Salads I've had. I mean it has BACON dressing!! You need to go try this now.
