It’s National Sloppy Joe Day

True story, it’s a thing, National Sloppy Joe Day is March 18th, how fun is that?  As a busy family of five with three very active and hungry boys, Sloppy Joes make an appearance at our house quite often.

I’ll admit, my childhood Sloppy Joes were the ones made with the classic Manwich Sauce, and to this day they bring back great memories.  Served up on hamburger buns, with a slice of American cheese and some fries or chips.  Yup, dinner was done and I was happy.  I just popped over to their site, and they have the cutest, I meant really super cute Sloppy Joe Jalopy recipe.

Unfortunately my kids weren’t a fan of the store bought sauce, so I made my own.  Over the years I’ve developed many Sloppy Joe style sauces and sandwiches just to keep things interesting.   These are a couple of the kids favourites.

In honour of National Sloppy Joe day, I think I’m going to do a Sloppy Joe BAR for dinner.   Offering up different flavours so there is something for everyone.  I’ll put out Hamburger Buns, Onion Rolls, Baked Potatoes, Baked Sweet Potatoes and everyone can make their own.

What to do with leftovers?

I love Intentional leftovers, I think I may have mentioned that before.  I take a leftover from one night and transform it into a completed different dish for the next nights lunch, dinner or snack.   Cook once, eat twice, yes please.   And this way the leftovers don’t turn into a science experiment in the back of my fridge.
