And we are off onto Day 2 of the 30 Day Cooking Challenge! Today we are looking at Sheet Pan Meals, and oh, the possibilities are endless. Honestly you can cook almost any combination of Meat & Vegetables with seasonings your family likes, this kind of meal is FLEXIBLE! We all need that. Meal Planning Sheet Pan Meals are your friend.

Tips for making Sheet Pan Meals
- Choose meat and vegetables that will cook for about the same time
- Marinate your meat on Prep day
- Make sure to cut your root vegetables small enough, 1 1/2 inch pieces usually
- Add quicker cooking vegetables part way through the cook time

Tip: While cooking your Sheet Pan meal make some Roasted Garlic. Your house will smell amazing and you’ll have Roasted Garlic on hand for Sauces, Gravies, Mashed Potatoes and more!

Sheet Pan Thai Chicken Dinner
This Thai Chicken Sheet Pan meal is one of our all time favourites and popular with my blog readers too. You can easily double the chicken and freeze half in the Freezer for another night. I also recommend making double the Peanut Sauce! It's just that good.
Italian Sheet Pan Sausage & Harvest Vegetables
As we head into fall, this Italian Sheet Pan Sausage and Harvest Vegetable meal makes it's way onto the menu often. I love that I can prep this ahead on Sundays, and store it in the fridge until later in the week. The sausage and vegetables hold up well, and the seasoning adds great flavour. Excellent for dinner after a long day at work, the oven does all the work and clean up is a breeze.
Baked Salmon with Greek Salsa
This Baked salmon is cooked in the oven and topped with a Greek Salsa full of fresh flavours. Leftovers can easily be turned into a delicious salad combining the salsa, tzatziki and flakes of the roasted salmon or top a fresh salad with it for an even healthier lunch. Cook once eat twice! I love that.
Honey Balsamic Sheet Pan Chicken
This Honey Balsamic Sheet Pan Chicken from Flavor Mosaics has some of my favorite flavours. I love the combination on Honey and Balsamic, a little sweet, with a pop of flavor from the Balsamic Vinegar. You can Meal Prep this one ahead or make on the fly at the last minute. The marinade makes a delicious sauce and you end up with juicy, glazed chicken and yummy roasted potatoes plus whatever veggies your choose. Winner Winner, chicken dinner!

Okay, this one is not dinner, and it's not technically a sheet pan, but I had to include it anyways. The ladies over on 2 Cookin' Mama's shared this Easy One-Pan Dessert on their blog and I knew I had to share it here! Prep this while your Sheet Pan dinner of choice is cooking and pop it in the oven when you sit down. Dessert is ready by the time you're done.
