Baked Salmon with Greek Salsa
Fresh and light, the marinade, dressing and Greek Salsa are Prepaheadable. On cooking day, you just bake the salmon, toss the prepped vegetables with the vinaigrette and dinner is done. The Instant Pot Garlic Herb Rice Pilaf is the perfect side.

BLT Pasta Salad – From Little House Big Alaska
Fellow food blogger Laura Sampson from Little House Big Alaska shared this BLT Pasta Salad with me, and I knew immediately that it was going on my meal prep plan. Instant Pot Mongolian Beef
I do most of the prep ahead for this meal. Slice the beef, prepare the sauce and then on cooking day my Instant Pot does the rest! I like to serve it with steamed or fried rice, and store bought spring rolls from Costco (those are a family fave). Leftovers are great for lunch the next day if there are any.

The Strawberry Pineapple Lemonade sounds incredible…partially because my air conditional shorted out this morning and it is 90 degrees right now.
