Summer Weekly Meal Plan #2

Here’s what’s on my Prep Aheadable Meal Plan for this week.

Sunday

Sliced grilled chicken, slices of avocado, cherry tomatoes halved, bocconcini pearls, parmesan cheese and bacon on a bed of lettuce.

Grilled Chicken Caprese Salad

Super Hot Summer Days call for dinner recipes that are full of flavour, crisp, fresh, and sav0ury.  The flavours in this grilled Chicken Caprese Salad are just what I look for in a Main Course Summer Salad.  Leftovers are incredible as  a salad bowl, or in a wrap.

Monday

Seared chicken breasts with mushroom, onion, goat cheese sauce and a sprinkle of chopped parsley on a square white plate.

Tuesday

Baked Salmon with Greek Salsa

Fresh and light,  the marinade, dressing and Greek Salsa are Prepaheadable.  On cooking day, you just bake the salmon, toss the prepped vegetables with the vinaigrette and dinner is done.    The Instant Pot Garlic Herb Rice Pilaf is the perfect side.

Wednesday

BLT Pasta Salad – From Little House Big Alaska

Fellow food blogger Laura Sampson from Little House Big Alaska shared this  BLT Pasta Salad with me, and I knew immediately that it was going on my meal prep plan.  Her twist on this recipe is really ingenious, and I’m excited to share it with you!  Please pop over to her Blog and check out all her other delicious recipes.  She produces, homey, fresh, rustic food for her family and we are so lucky that she shares it with us!

 

Thursday

Instant Pot Mongolian Beef

I do most of the prep ahead for this meal.  Slice the beef, prepare the sauce and then on cooking day my Instant Pot does the rest!  I like to serve it with steamed or fried rice, and store bought spring rolls from Costco (those are a family fave).   Leftovers are great for lunch the next day if there are any.

  1. The Strawberry Pineapple Lemonade sounds incredible…partially because my air conditional shorted out this morning and it is 90 degrees right now.

    But the Instant Pot Mongolian Beef is also calling out my name!
