Instant Pot Taco Soup

Instant Pot Taco Soup; perfect for meal prep

It’s Sunday, and I’ve got a super busy week ahead of me as always.  This Instant Pot Taco Soup is part of my Meal Prep strategy.  It makes a huge batch, uses ingredients I always have on hand, and the kids love it!    Now, if you haven’t hopped on the Instant Pot craze yet, that’s okay too, I’ve included instructions for the Slow Cooker and the Stove Top as well, don’t want to leave anyone out!!

Generally I meal prep on Sundays, 5 Dinners, 1 soup, and at least some lunches for the week ahead.  I recently added prepping some breakfasts as well, Eggs in a Mug are AMAZING.   Check out this recipe for Tex Mex Eggs in a Mug, and  you’ll see how easy they are to adapt to your families taste.   I plan on making a batch of these and storing them in a pitcher in the fridge which will hopefully encourage the kids to eat something, anything, before they head out the door for school.

I’ve always been a Menu Planner, however meal prepping and cooking one day a week really is a game changer, and while I use some Meal Planning subscription services,  I often use my own recipes as well.  It’s a little more work as I have to make the Shopping List myself, but I like variety.

Some of my favourite Meal Planning and Prepping sites are:  5 dinners 1 Hour , you can get a Sample Plan for $2 which gives you 10 recipes or 2 weeks worth of samples to try.  Menu Planning Central offers a free week of meals, all of which are Gluten Free btw, and has a more international recipe mix.  Eat at Home is also great, and affordable.  You get access to all 4 of their plans, plus a freezer stash, and some other goodies for just $14 a month (less if you sign up for longer).   They have a 2 week sample you can download for free.

Okay, now, if you don’t meal plan, that’s okay!  We’ve got an ever growing selection of recipes on the Love on a Plate Blog and we share some amazing must try recipes over on our Facebook Page.  Join us!

  • 2 1/2 cups beef broth
  • 1 cup tomato sauce
  • 1  28 oz cans diced tomatoes

  • Set the instant pot to “Saute” and add olive oil.
  • Once hot, add the ground beef, onions and bell pepper, cook until meat is browned.
  • Remove the insert (careful it's hot), and drain the beef.  Return to insert.
  • Put the meat, onions and peppers into the instant pot.

For the Slow Cooker:

  • In a large skillet, over medium heat, add olive oil and onions. Saute 1 minute.
  • Add the ground beef, bell pepper, cook until meat is browned.
  • Drain browned ground beef, and transfer to a slow cooker.
  • Add all remaining ingredients and stir well.

For the Stove Top:

  • In a large soup pot, over medium heat, add olive oil and onions. Saute 1 minute.
  • Add the ground beef, bell pepper, cook until meat is browned.
  • Drain browned ground beef, and return to the soup pot.
  • Add all remaining ingredients and stir well.
  • Simmer on low for at least an hour with the lid on, but slightly off center to allow some steam to escape.  Add more broth or water as desired.

We like to serve our Taco Soup topped with cheese, diced red onions, sour cream and crumbled tortilla chips.
