Meal Planning: Skillet Meals



It’s Day ONE of the 30 Day Meal Planning Challenge.  If you are cooking along with me it’s Skillet Day!

Skillet meals are quick and easy, perfect for a beginning of the week dinner, when you still have the energy to COOK!  When I’m planning, I often choose a chicken or seafood dish to make, and I always slot it in earlier in the week so everything is still fresh. 


October 1st is not only the first day of the Meal Planning Challenge, it’s also my Mom’s birthday.  She loves seafood, so I’m making Easy Shrimp Creole, Saffron Rice, Steamed Broccoli and French Bread.  I’m pretty excited.
